Chia seeds are high in carbs about 42%, around 16% protein and 31% fat and therefore offer high energy. The carbs in chia are mostly fiber. The seeds are hydrophilic absorbing around 10-12 times weight when soaked in liquid. They also develop a mucilaginous coating that gives them a distinctive gel texture. They are also high in fiber content and are loaded with antioxidants.
