A wonderful way to supplement your vitamin and mineral intake is by eating more apricots!  Apricots contain vitamins, A, C, and E and are high in potassium and fiber. They also contain antioxidants such as Beta Carotene.  Apricots also have a wonderfully unique flavor that seems to combine the sweetness of peaches with the tartness of plums.  They are a wonderful addition to any mix!
